  1. Creamy Chicken Salsa Bake 

 

A bubbly, cheesy bake that is bound to become a go-to recipe for quick dinners. 

Ingredients 

 

1 Grilled chicken 

1 jar salsa (mild or spicy, your choice) 

4 ounces freshly grated Monterrey Jack cheese 

  

Instructions 

 

Remove and shred the chicken meat, discarding the skin and bones. 

Combine the shredded chicken with salsa and spoon into individual oven-safe dishes. 

Sprinkle with cheese and bake in a preheated oven at 375°F for 12-15 minutes, or until the cheese is golden and bubbly. 

Serve with a dollop of Greek yogurt and a side of mashed avocado or guacamole for added creaminess. 

  

  1. Herb-Seasoned Crispy Chicken Nuggets

 

These crispy nuggets with a hint of ranch flavour pair perfectly with baked veggies for a wholesome dinner. 

Ingredients 

 

2 pounds chicken breast or tenderloins, cut into 1-inch pieces 

2 eggs, beaten 

1 packet ranch dressing mix, divided 

1/2 cup protein pancake mix 

1/4 teaspoon black pepper 

1/4 teaspoon garlic powder 

1/4 teaspoon paprika 

2 medium zucchinis, sliced into rounds 

 

Instructions 

 

Preheat oven to 400°F. 

Toss chicken pieces in beaten eggs until coated. 

In a large Ziploc bag, combine 2 tablespoons of ranch mix, pancake mix, pepper, garlic powder, and paprika. Add the chicken pieces to the bag and shake to coat evenly. 

Arrange the chicken in a single layer on one half of a large sheet pan. Place zucchini slices on the other half, sprinkling them with the remaining ranch mix. 

Bake for 14-16 minutes, flipping the chicken and zucchini halfway through, until the chicken is golden and cooked through. 

  

  1. Mediterranean-Style Chicken Zucchini Casserole

 

A vibrant, cheesy bake that brings together Mediterranean flavours with juicy chicken and tender zucchini. 

 

Ingredients 

 

3 medium zucchinis, quartered and diced into 1-inch cubes 

1 1/2 pounds boneless chicken breasts, cut into 1-inch cubes 

1 can (28 ounces) petite diced tomatoes, drained 

1/2 cup sliced pepperoncini peppers 

1/4 cup pitted Kalamata olives, halved 

1 teaspoon Italian seasoning 

Sea salt and freshly ground black pepper 

1 cup shredded Italian cheese blend (mozzarella, provolone, fontina) 

  

Instructions 

 

Preheat oven to 375°F. 

In a large baking dish, toss chicken, zucchini, diced tomatoes, pepperoncini, olives, Italian seasoning, salt, and pepper. 

Cover with foil and bake for 35-45 minutes, until the chicken is cooked through. 

Remove the foil, sprinkle with cheese, and bake uncovered for an additional 8-10 minutes, until the cheese melts and bubbles.
